If I have a website that is a job posting board, doesn't the adsense ads on the right simply advertise other job posting boards? Why would I want to do that, show my customers who my competition is?

Well, the whole purpose of having Google's Adsense ads on your website would be so that people WILL click on them. You make money each time someone does.
However, if you don't wish to show a competitor, then go back into your Adsense account, and there is a place where you can list the URL's of websites that you want blocked from your ads.
