IP address.
They most likely use IP tracking software on their servers like chris said. So they log your IP when you sign up for adsense and if your IP address is logged clicking on one of your advertisements it will draw up red flags in their systems. They may or may not use this system but from what I hear they do catch people who click on their own ads.
If you use google analytics you will realise how sophistcated they are. Google is Big brother and knows everything.
